How to make Mace infused Veg Rice Porridge 

Ingredients 

  • 02 cups of rice flakes - washed 
  • 02 cups of water or vegetable broth 
  • 4-5 small pieces of Mace 
  • 01 small onion - minced 
  • 03 cloves of garlic - minced 
  • 01 cup of shredded or chopped vegetables (corn spring onions, carrot etc.. ) 
  • 01 cup of coconut milk 
  • Garnishing 
    • Microgreens 
    • Fried onions 

Method 

  • Add the washed rice flakes into a sauce pan and add salt, pepper, mace, minced onions and garlic and cook in a low heat for about 05 minutes. 
  • Next add shredded vegetables, give it a good mix and let it simmer for another 10 minutes. 
  • Finally add coconut milk and some fried onions and let it simmer for 05 minutes. 
  • Adjust the porridge consistency by adding more coconut milk or vegetable broth as needed. Stir until you reach your desired thickness.
  • Ladle the mace-infused vegetable rice porridge into bowls.
  • Garnish with more fried onions, microgreens. 
  • Serve hot with some freshly baked bread.
