These dried flower buds of the clove tree are extensively used in both savoury and sweet preparations. In Sri Lankan curries, cloves are often combined with other spices like cinnamon, cardamom, and cumin to create a complex and fragrant spice blend. They are also a key component in biryani, enhancing the rice with their warm and slightly sweet notes. Additionally, cloves are employed in Sri Lankan desserts, such as "love cake" and various spiced sweets, where they contribute a distinctive and enticing aroma. Beyond their culinary uses, cloves are valued in Sri Lankan culture for their potential health benefits, ranging from aiding digestion to providing relief from dental issues.

Poached Apples with Cloves

Poached apples with cloves is a delightful and aromatic dessert that captures the essence of comforting warmth. In this simple yet elegant dish, apples are gently simmered in a sweet syrup infused with whole cloves, creating a symphony of flavours. The cloves impart a fragrant and slightly spicy note, enhancing the natural sweetness of the apples. As the apples poach, they absorb the rich combination of spices, resulting in a tender and flavorful fruit that is perfect for autumn or winter indulgence. Served on its own or accompanied by a dollop of vanilla ice cream or a drizzle of caramel sauce, poached apples with cloves offer a comforting and festive treat that showcases the harmonious pairing of fruit and spice. Ingredients 

  • 04 medium-sized apples (such as Gala or Fuji)
  • 03 cups water
  • 1/2 cup granulated sugar
  • 1 cinnamon stick
  • 4-6 whole cloves
  • 1 teaspoon vanilla extract
  • Lemon zest (from one lemon)

Method 

  • Peel the apples, leaving them whole or halving them depending on your preference.
  • In a saucepan, combine water, granulated sugar, cinnamon stick, whole cloves, vanilla extract, and lemon zest. Stir the mixture over medium heat until the sugar dissolves.
  • Once the sugar has dissolved, gently place the apples into the poaching liquid. Ensure the apples are submerged in the liquid.
  • Bring the liquid to a simmer, then reduce the heat to low. Cover the saucepan and let the apples simmer for about 15-20 minutes, or until they are tender but not mushy. Check for doneness by piercing an apple with a fork.
  • Allow the apples to sit in the poaching liquid for an additional 5-10 minutes with the heat turned off. This allows them to further absorb the flavours.
  • Using a slotted spoon, carefully remove the poached apples from the liquid and place them in serving bowls or plates.
  • If you desire a thicker syrup, simmer the poaching liquid over medium heat for a few more minutes until it reduces slightly. Remove the cinnamon stick and cloves.
  • Pour the reduced syrup over the poached apples. Optionally, serve with vanilla ice cream, a dollop of whipped cream, a drizzle of caramel sauce, or a sprinkle of chopped nuts.
  • Serve the poached apples warm and enjoy the delicate combination of tender fruit and aromatic spices.
