Ingredients
- 03 eggs
- 125g of brown sugar
- 125g of butter
- ¼ tsp of Tikiri Manike Nutmeg powder
- ¼ tsp of Tikiri Manike Cinnamon powder - ground cinnamon sticks
- 01 pod of crushed cardamom
- 125g of flour
- 100g of dates- pitted and chopped into small pieces - soaked overnight in tea water
- ¼ cup of chopped cashews / dried grapes
- 04 drops of almond essence
- 01 tsp of baking powder
- ¼ tsp of salt
- 02 drops of vanilla essence
Method
- Preheat your oven to 350°F (175°C). Grease and flour a round cake pan.
- In a bowl, whisk together the all-purpose flour, baking powder, salt, nutmeg powder, and ground cinnamon, crushed cardamom. Set aside.
- Soak the chopped dates in tea water for 10 minutes- drain and set aside.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Add the vanilla extract and mix until well combined.
- Add the dates and other chopped nuts / dried grapes to the mixture and fold
- Gradually add the dry ingredients to the wet ingredients in three parts and mix well.
- Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 40 minutes or until a toothpick inserted into the centre comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Once cooled, you can garnish with some orange rings and cherries.
